I like this idea best because then they get into the salon to see our stylists in action, without having to trust the stylists with their hair just yet.

Go with a Product. Clients love something for free, make sure it is a product that was uses on the client. You can also offer a free conditioning treatment to new and regular clients (don't forget about them), it cost almost nothing. If you can get your products selling, it's like having another stylist (profit wise) without the hassle. Maybe you can offer a free shampoo with a cut. Or a free blow dry. That way they are still buying from you, but you can give them something simple for free.
